But here in this Nankhatai recipe we are preparing with Whole Wheat Flour or Atta instead of All Purpose Flour or Maida. This comes out extremely yummi and melt in mouth. Necessary Ingredients Required To Prepare Whole Wheat Nankhatai without Oven:
Wheat flour 150 gram, Gram flour 50 gram , Ghee 100 gram, Baking powder 1 tsp, Sugar 80 gram, Cardamom powder 1/4 tsp, Pistachios.
Step By Step Method Of Preparation Of Whole Wheat Nankhatai in Kadai:
Step One: Take 80 gram sugar and grind it into a powder.
Step Two: Take powder sugar into a large bowl.
Step Three: Add 100 gram Ghee into it. Ghee should be in room temperature.
Step Four: Now mix Ghee and Sugar nicely with the help of a spoon or whisker until light and fluffy consistency. It will take 3 to 4 minutes.
Step Five: Now add Whole wheat flour or Atta 150 gram and Gram flour or Besan 50 gram into it.
Step Six: Add Baking powder 1 tsp.
Step Seven: Add Cardamom powder 1/4 tsp.
Step Eight: Now mix everything gently with the help of a spoon first. After mixing it with spoon now mix it with hand softly and make a perfect dough for Nankhatai.
Step Nine: As cookie dough is ready rest it for 20 minutes in Refrigerator to set the dough for making cookies.
Step Ten: In the mean time take a steel plate and apply some ghee into it. Another plate place a baking paper(If you don't have baking paper then avoid this step. I just wanted to show both the methods).
Step Eleven: Now take out the cookie dough from Refrigerator and start making some round balls which will turn into cookies after baking. Place the balls into the plate by maintaining some distance because as cookies get baked it will become bigger in size so we have to avoid sticking the cookies to each other.
Step Twelve: Add some Pistachios on top of the cookies and press it little.
Step Thirteen: Now heat up a pan in medium flame and place a stand in the bottom of the pan(stand is must because it will prevent the direct heat to come to our cookies). Now on top of that stand place the cookie plate and close the lid.
Step Fourteen: In medium flame cook it for 20 minutes. After 20 minutes switch off the flame and take the cookie plate out of the pan and let it cool. Bake other cookies or Nankhatais in similar way.
After Nankhatai cookies cool down completely serve and enjoy it with a hot cup of tea
