or Gatte (plural) Curry recipe is a purely Rajasthani cuisine where
gatta is prepared with gram flour sausage or dumplings and gravy is
prepared with yogurt and added spices.So Besan or Gram flour is the main
Ingredient of this recipe. This recipe is very popular in other parts
of India as well but authentic Gatte ki Sabzi can only prepared by

Necessary Ingredients Required For Gatte Ki Sabzi Recipe:
For Gatta or Gram Flour Dumplings:
Salt as per taste,Gram flour 1 cup or 230 gram, Carom seeds or Ajwain 1/4 tsp, Red chili powder 1/2 tsp,Turmeric Powder 1/4 tsp,Asafoetida or Hing 1/4 tspYogurt 1 tbsp,Ghee 1 tsp,Water to prepare the dough.
For Gravy Preparation
Ghee 1 tbsp,Tomato 1 small, Onion 1 medium,Garlic 4 cloves,Ginger 1 small piece,Cloves or Long 4 pieces,Cinnamon stick 2,Green cardamom 3,Cumin powder or seeds 1 tsp,Coriander powder or seeds 1 tsp,Black pepper powder or seeds 1/2 tsp,Yogurt 1/2 cup or 200 gram,Red chili powder 1/2 tsp,Turmeric powder 1/4 tsp,Salt as per taste,Water 1/2 cup (I have used same water where gram flour dumplings were boiled).Step By Step Method Of Preparation Of Gatte Ki Sabzi Recipe:
Step One: Into a medium sized bowl take 1 cup gram flour. Add all the ingredients for dumplings as mentioned above except water. Mix nicely everything. Now add little by little water and prepare a dough.
Step Two: Now apply some ghee to working platform and palm of your hands. This step is important because it will prevent sticking of the dough.
Step Three: Now take the dough and flatten it in your working platform with the help of your hand. It should be little thick. Now cut it with a knife in square shapes. It will look like paneer cubes.
Step Four: Now boil water into a pan and add some salt into it. As it comes to a nice boiling position then add our dumplings or gattas. In high flame boil it for 10 minutes. After 10 minutes take it out and keep aside. This boiling water we will keep separately for using in gravy.
Step Five: Now into a grinder add onion, tomato, ginger, garlic, cloves, cardamom, cinnamon stick, cumin seeds 1, coriander seeds, black pepper and some water. Grind it to a fine paste.
Step Six: Now heat a pan. Add 1 tsp ghee into it. As ghee heats up add the masala paste which we have grind. Mix it very nicely.
Step Seven: Now add red chili powder and turmeric powder and mix well. Cook it until it starts releasing oil.
Step Eight: Now as it starts releasing oil or ghee add yogurt and mix nicely. Keep saute until a nice boil comes.
Step Nine: Now add water to it and some salt as per taste. Give it a nice boil.
Step Ten: Now add gattas or dumplings to it. Mix once. Close lid. Cook for five minutes in medium flame.
Step Eleven: After 5 minutes our curry is ready.
Serve hot.
