Dudh Puli Pitha or Pooli Pitha Or Kheer Puli is a very delicious pitha recipe. Pitha is basically in easy language we can say is rice flour cake. There are some pithas which can be prepared with wheat flour and all purpose flour. But the traditional way of preparing pitha is with rice flour.  Pitha is basically a famous recipe in eastern regions in South Asia like some parts of India, Bangladesh and Nepal. This pitha recipe can also be called bhapa(steamed) puli pitha. During Makar Sankranti this pitha recipe is very common in Bengal and Assam in India.
It can be prepared with very less ingredients and it's taste is awesome. We can say this pitha recipe is very delicious dessert. Let's check the necessary Ingredients and step by step method of preparation of Dudh Puli Pitha--

Necessary Ingredients To Prepare Dudh Puli Pitha Recipe:


Rice Powder 200 gram,
Water 130 ml,
Coconut 250 gram(grated),
Milk(full fat) 500 ml,
Saffron slices 9 to 10 pieces,
Jeggery 130 gram(grated),
Powder Milk 70 gram,
Salt 1/4 tsp.


Step By Step Method To Prepare Dudh Pooli or Pooli Pitha Recipe:


Step One: Heat a pan and add 130 ml of water into it. Let the water comes to a boil.

Step Two: As water comes to a boil add salt into it and mix it nicely.

Step Three: Now add the rice powder into it and mix it very nicely so that rice and water mix completely. While mixing the rice powder and water simmer the flame. After mixing it properly switch off the flame. Make sure that no dry rice powder left unmixed.

Step Four: Now let it cool for sometime so that we can touch it.

Step Five: Now after cooling down apply some ghee in your palm and prepare the rice powder dough by pressing the dough with your palm.

For Puli Pitha Stuffing:

Step Six: Heat a pan and add grated coconut.

Step Seven: Now add grated Jeggery 100 gram into in and keep saute until coconut is mixed with Jeggery completely(30 gram Jeggery we kept separately for milk). As Jeggery melted properly and mixed with coconut switch off the flame.

Our Pooli Pitha Stuffing stuffing is ready.

Step Eight: Now boil 500 ml of milk into a pan. In low flame keep boiling until quantity becomes half. Stir in-between.

Step Nine: Add saffron into this boiling milk. This will enhances the color and flavor of the milk.

Step Ten: As milk comes to half in quantity add milk powder into it and keep stirring so that no lump can be formed.

Step Eleven: As milk powder mix with the milk completely switch off the flame and add the remaining jegerry into it and mix nicely. Jeggery will melt nicely and our kheer or rabri is ready.

Step Twelve: Now make some small equal proportions of rice powder dough. Take one small dough and flatten it with the help of your finger add some coconut stuffing in middle and close the dough. Like this prepare all the pithas by adding coconut stuffing inside.

Step Thirteen: Now add all the pithas into our milk which we prepared earlier. Let it rest for 1 hour. Our Dudh Pooli Pitha is ready.
