It is a very tasty Indian dessert recipe prepared with milk, dry fruits and added flavor of saffron and cardamom powder. Basundi is mostly popular in the state of Gujarat, Maharashtra and Karnataka. Basundi is also called as Rabri in North India. It is basically thickened milk preparation. Basundi can be made for any festival or celebrations or also as a sweet dessert which you can serve after meals. This Basundi tastes best when served chilled. Milk 1 litr, Sugar 1 cup, Powder Milk 1 cup, Saffron 1/2 tsp, Cardamom powder 1/4 tsp, Dry fruits 1/4 cup.
Method Of Cooking Step By Step:
Step One: Heat a pan and add one liter milk into it. Boil The milk. As milk comes to a boil simmer the flame. Stir in-between.
Step Two: Make sure that the milk doesn't stick to the bottom of the pan. Non-stick pan is good for this recipe because milk has to boil for good amount of time.
Step Three: Before start making Basundi take 2 tbsp of milk into a small bowl and add pinch of saffron into it. This saffron milk will be adding very nice flavor to our recipe as well as the texture.
Step Four: keep stirring the milk in low flame. The quantity of milk have to become half.
Step Five: Now take some dry fruits and chopped them evenly and add to boiling milk.
Step Six: Now slowly milk will get thicken. This is the time to add saffron milk and mix this very nicely.
Step Seven: As milk comes to a point where it almost becomes half at this point add sugar into it and keep mixing it.
Step Eight: After 5 minutes one cup of add powder milk into it and keep mixing. Break all the lumps and keep mixing.
Step Nine: This step is very important as powder milk form lumps. make sure all the lumps has broken .
Step Ten: Now cook some more time around 5 more minutes. Add some cardamom powder.
Basundi is ready. let it come to room temperature after that keep it in refrigerator for an hour. Serve it as a dessert after a good meal. It taste good if it is chilled.
NB: 1. Always boil the milk until it comes half in quantity. And always make sure that milk doesn't stick to the bottom of the pan. As it gets half in quantity its time to add other ingredients.
2. I this recipe full cream milk is always preferable.
