Thali is very popular in India. Thali means a platter of food which contains more than 2 or 3 items. This is Indian vegetarian thali recipe. Here I have prepared steamed rice with side dishes like eggplant fry(bengena bhoja), Palak Pakoda (paleng xaakor pokori), Sweet pumpkin fry(rongalau bhaji) with Papaya Khar(Omitar khar). This is very simple and unique thali recipe without using onion, garlic and any other spices as well unlike other Indian thali recipes.

Necessary Ingredients Required To Prepare Assamese Vegetarian Thali Recipe:
Rice 1 cup (as per requirement),For Eggplant Fry:
Eggplant cut into pieces,
Salt as per taste,
Turmeric powder 1/4 tsp,
Kashmiri Red chili powder 1/4 tsp
Oil for frying.
For Palak Pakoda:
Palak or spinach leaves 10 to 12(as per requirement),
Gram flour or besan 250 gram,
Rice flour 2 tsp,
Salt as per taste,
Turmeric powder 1/2 tsp,
Kashmiri red chili powder 1/2 tsp,
Water to prepare the thick mixture,
Oil for frying.
For Pumpkin Fry:
Sweet pumpkin cut into cubes(skin should be there),
Salt as per taste,
Turmeric powder 1/4 tsp,
Oil for frying.
For Papaya Khar:
Papaya cut into small pieces,
Red masoor dal 2 tbsp soaked,
Khar(organic soda) 2 tbsp,
Salt as per taste,
Turmeric powder 1/4 tsp,
Ginger crushed 1 tbsp,
Green chili one.
Step By Step Method Of Cooking For Assamese Vegetarian Thali:
Steamed Rice: I have boiled rice into a pan as the rice boiled properly strain the water. Rice is ready(before boiling it soak it for 30 minutes).Eggplant Fry: Cut eggplant into pieces. I have shown it in my video description. Soak it for 10 minutes. If it is not soaked it absorbs lots of oil. Now apply salt, turmeric and red chili powder to it. Fry it until it gets golden brown from all the sides in low flame.
Palak Pakoda: Wash and dried the palak leaves. Now in a bowl mix gram flour, rice powder, salt, turmeric powder and red chili powder. Add water to it and prepare a thick mixture. Now fold palak leaves and deep into the mixture and fry it until golden and crisp.
Sweet Pumpkin Fry: Cut sweet pumpkin into cubes and apply salt and turmeric powder to it. I have not remove the skin of pumpkin. Now fry it in hot oil. First fry the skin side and let it brown and soft. Then flip to other side as well and fry it until golden. Flame should be in medium.
Papaya Khar: Khar is a very popular recipe of Assam. Khar means organic soda which is prepared from dried banana tree which is burnt and the ashes are soaked in water. That soaked water is khar. Here I have prepare Papaya khaar.
Cut papaya into small pieces. Heat oil into a pan and add papaya and soaked masoor dal mix nicely. Add salt and turmeric as well and mix. close lid and cook for 5 minutes. Add khar now and mix add water 1 cup and let it boil. Close lid and lower the flame and cook the khar until papaya becomes soft. Check if water needed water can be added. Now garnish khar with some mustard oil.
This simple vegetarian thali is ready.
