Papaya khar is a traditional cuisine of Assam. In this recipe papaya is cooked with a very little amount of organic bicarbonate soda water. This khar(bicarbonate soda) water is prepared from dried and burnt banana tree ashes which is soaked in water and later ashes are strained out and the water is used in preparing various khar recipes like papaya khar, khar dal, cucumber khar and many more. Necessary Ingredients Required To Prepare Papaya Khar Recipe:
Papaya cut into small pieces,Masoor dal 2 tbsp(soaked),
Mustard oil 2 to 3 tbsp,
Turmeric powder 1/4 tsp,
Salt as per taste,
Ginger crushed 1 tbsp,
Green chili 1 or two,
Khar water 2 tbsp(depends as per how much strong it is).
Step By Step Method Of Preparing Papaya Khar Recipe:
Step One: Wash and cut the papaya into small small pieces. If pieces are strong It will cook early since I am going to prepare it in a pan. If in a hurry it can be prepared in pressure cooker also.
Step Two: Heat a pan and add a tablespoon of mustard oil (khar is always prepared with mustard oil which enhances it's taste).
Step Three: As the oil heats up add papaya into it and together add soaked masoor dal also and mix nicely. Add salt and turmeric as well and mix very nicely. Any kind of khar preparation masoor dal(or mung dal who prefers it) is added because it gives necessary thickness to the recipe.
Step Four: Now close the lid and in medium flame cook it for 5 to six minutes.
Step Five: After 6 minutes mix once again nicely and add water into it. I have added 2 cups of water since it will take minimum 20 minutes to cook properly(since my papaya is very tender it will take more time to cook).
Step Six: After adding the water give it a nice boil and lower the flame and close the lid now let it cook in 15 minutes. Stir in-between and if you find water is needed you can add water.
Step Seven: After 15 minutes we will have to check papayas has been boiled or not. Now at this point add a slit green chili and crushed ginger(grushed ginger is the main spice for khar recipe). If it is boiled then our recipe is ready and if not boiled properly then again cook it in a low flame and lid closed for 5 to 6 minutes.
Step Eight: Now keep it out into a serving bowl. For garnishing khar mustard oil is the necessary ingredient. So pour 1 tbsp of mustard oil into top of it and a green chili. Serve your guest this papaya khar recipe as a side dish with steamed rice.
