This is a preparation of chana dal or bengal gram lentil where no onion and garlic has been used. It is for those vegetarians who doesn't consume onion and garlic as well. It is very delicious and believe me nobody can find out that some spices are missing from it. It can be serve with hot steamed rice and can be serve with puri or paratha as well. Let's see the necessary Ingredients and step by step method of preparation.

Necessary Ingredients Required To Prepare Vegetarian Chana Dal Recipe:

Chana Dal or Bengal Gram 350 gram,
Tomato 1 large,
Green chili 1,
Ginger crushed 2 tbsp,
Bay leaf 1,
Panch-phoron 1/2 tsp,
Cinnamon stick 1,
Cloves 2,
Cardamom 2,
Star anis 1 piece,
Mustard oil 2 tbsp,
Cumin-coriander powder 1/2 tbsp,
Turmeric powder 1/2 tsp,
Red chili powder 1/2 tsp,
Dried mango powder or amchur powder 1/4 tsp,
Garam masala powder 1/4 tsp,
Salt as per taste,
Sugar 1/4 tsp, 
Ghee 1 tsp,
Water 2 cups(large) 

Step By Step Method Of Preparation Of Vegetarian Chana Dal Recipe: 

Step One: Clean and wash the dal and soak it for 2 hours.

Step Two: Now heat oil into a pressure cooker and add all the whole spices like bay leaf, chinnamon stick, cloves, cardamom, star anis and panch-phoron.

Step Three: Now add crushed ginger to it and mix it nicely. Flame should be medium or low.

Step Four: Now add chopped tomato to it and mix it nicely. Add all the spices like cumin-coriander powder, amchur powder,turmeric powder and red chili powder and mix everything nicely. Cook until tomatoes getting softer. Add little water to avoid burning the masalas. Cook it until it starts releasing water. Add pinch of sugar as well it will enhances the taste and texture of dal.

Step Five: Now add soaked dal to it and mix. Add salt as per taste. Mix nicely.

Step Six: Cook it 5 to 6 minutes in medium flame and stir in-between.

Step Seven: Now add water 2 cups and close  the lid and cook until 3 to whichels.

Step Eight: As pressure gone automatically switch on the flame and breake some dal with your spoon to get that thick consistency. Add 1 tsp crushed ginger to it.

Step Nine: Add some ghee to it to enhance the flavor. Garnish with green chili and coriander leaves.
