Roasted and mashed potato recipe is traditional recipe of Assam. These is very popular recipe in winter season when in every household bonfire is there in chilled evenings and new potatoes are burnt directly into flame and cook and after that mashed with spices and mustard oil. This is very simple yet very delicious. It can be called as alu bharta recipe also but in this recipe no seasonings are required. Eggplants are also cook like this. Here in this recipe I have cooked potatoes in a nonstick pan and roast it unlike in traditional way od directly put it into the flame. This procedure also recipe comes out perfect. It can also be cooked in microwave. Let's check the necessary Ingredients and step by step method of preparation.

Necessary Ingredients Required To Prepare Roasted Or Burnt and Mashed Potato Recipe:

Potato 2 medium sized directly burn on the flame or dry roast in a pan,
Mustard oil 1 tbsp,
Salt as per taste,
Green chili chopped 1,
Coriander leaves chopped,
Onion chopped 1 small sized.

Step By Step Method Of Preparation Roasted Or Burnt Potato Mashed Recipe: 

Step One: Take 2 medium sized potato and burn them directly into the flame. It can be grill in microwave also. I have dry roasted it into a non stick pan for 20 minutes. Iron pan can also be used. Heat the pan and add the potatoes and flame should be high for first 7 to 8 minutes and close the lid. Make sure to flip it all the sides so that it can be cooked evenly from all the sides. After 8 minutes flame can be reduced to medium.

Step Two: After potatoes has been cooked properly let it cool down for some time. Potatoes can checked if it is cooked or not with the help of a fork. After cooling down remove the skin of potatoes.

Step Three: Transfer the potatoes into a bowl and mash it nicely with a flat spoon or a masher. It should be mashed nicely.

Step Four: Now add green chili chopped, salt as per taste, coriander leaves chopped, mustard oil and chopped onion. After adding these Ingredients mix nicely.

Step Five: Now shape the mashed potatoes into some round balls. Our burnt potato mashed is ready.
