Pointed Gourd is a very common vegetable in Bengal and Assam kitchen. This vegetable is delicious. This recipe basically made with yogurt based gravy and some spices. This recipe has unique taste and flavor. It can be served as a main course recipe. This is best vegetable recipe option for vegans. Necessary Ingredients To Cook Pointed Gourd With Yogurt Gravy:


Yogurt 1/2 cup,
Parwal 250 grams (Pointed Gourd),
Onion paste 1/2 cup,
Oil 1 cup,
Cloves 2,
Green cardamom 2,
Cinnamon 1-2,
sugar to taste,
Salt to taste,
Turmeric powder 1/2 tsp,
Red chili powder 1/4 tsp,
Coriander powder 1/2 tsp,
Cumin powder 1/4 tsp,
Ginger-garlic paste1 /2 tsp

Step By Step Method Of Cooking Pointed Gourd With Yogurt Gravy:



Step One: First of all clean the pointed gourds and remove top and bottom parts little bit and peel the green layer of it which is a very thin layer. Now the light green layer is there you can remove it or keep it. I have removed and gave it a nice design. You can see it in the video.


Step Two: Slit it from top to bottom 3 to 4 times. This is because it can help to boil the pointed gourd evenly and helps salt and spices to go inside.


Step Three: Take one medium sized potato also and cut into long pieces.


Step Four: Now add some salt and turmeric powder to this pointed gourd and potato and mix nicely with your hand.


Step Five: Now heat some oil and fry this pointed gourd and potato separately till its getting brown in color.


Step Six: Keep them aside and in the remaining oil add some more oil if required and add some whole spices like cardamom, cloves and cinnamon stick. This whole spices gives nice flavor to this recipe.


Step Seven: Add onion paste and fry until golden.


Step Eight: Add ginger garlic paste and fry until raw flavor has gone.


Step Nine: Add other spices like turmeric powder, coriander powder, redchili powder and cumin powder and saute.


Step Ten: Now take 1/2 cup of yogurt and beat it evenly and add to our spices and mix evenly. cook for five to six minute.


Step Eleven: Now add our fried pointed gourd and potato and mix this evenly.


Step Twelve: Add salt as per taste and pinch of sugar to adjust the taste of the gravy and mix nicely.


Step Thirteen: Add some water for the gravy. Here i have added 1/4 th cup of water and mix this nicely.


Step Fourteen: Give it a nice boil.


Step Fifteen: At last add some garam masala to it and mix it nicely.


Our pointed gourd with yogurt gravy is ready. Enjoy with your hot steamed rice or chapati.
