Vegetarian Thali from India is very popular. Though there is difference in thalis place to place. Here I am showing this thali recipe from Assam. This is a simple thali which include 4 side dishes with dal. It is very tasty and simple and with less spices. Items here are rice(Main Item), Yardlong beans(lesera) fry with potato, Eggplant(Bengena) Pitika(mashed), Alu(potato) Mashed(pitika), Kumurar(Ashgourd) Sabji(curry), Dal. Let's prepare this recipe.
Necessary Ingredients For Dishes:
Ingredients For Dal:
Masur dal 250 gram,Onion 1 medium chopped,
Tomato 1 medium chopped,
Turmeric powder 1/4 tsp,
Salt as per taste,
Oil for cooking,
Water 2 cups,
Panch-phoron 1/4 tsp.
Ingredients For Bengena Pitika:
Eggplant 1 large,Mustard oil 1 tsp,
Onion chopped 1 small,
Coriander leaves chopped,
Salt as per taste.
Ingredients For Alu Pitika:
Potato 1 large,Onion 1 small chopped,
Coriander leaves chopped,
Salt as per taste,
Mustard oil 1 tsp
Ingredients For Lesera Bhaji:
Yardlong beans,Potato 1 amall cut into long pieces,
Oil 1 tsp,
Salt as per taste.
Ingredients For Kumura Torkari:
Ash gourd cut into cubes,
Potato 1 small cut into cubes,
Turmeric powder 1/4 tsp,
Coriander-cumin powder 1/2 tsp,
Salt as per taste,
Oil 1 tbsp,
Onion 1 medium chopped,
Panch-phoron 1/4 tsp.

Step By Step Method Of Cooking:
Step One: For preparing dal soak masur dal for 20 minutes. Now take a pan and add maustard oil. When oil heats up add panch phoron to it. Let panch phoron gets brown. Now add chopped onion to it and mix nicely. When onion becomes golden brown add some turmeric powder to it. Now add soaked dal to it and mix it nicely. flame should be medium. Now fry this dal for 5 minutes in medium flame. Now add 2 cups of water to it and mix nicely. As it comes to a boil close the lid and cook for 10 minutes in medium flame. After 10 minutes check dal its almost boiled now add one chopped tomato to it and in high flame cook it for 5 more minutes. Our dal is ready. Its very simple and delicious.Step Two: For preparing Bengena Pitika take one large Eggplant and wash it properly. Apply oil on it and let it burn. It can be burn in oven or flame. Burn it from all the sides. Now let it cool down properly and remove the skin. Now in a plate mash the Eggplant with salt chopped onion, chopped coriander leaves and mustard oil. green chili can also be added. Our Bengena Pitika is ready.
Step Three: For Alu Pitika take one medium sized potato and boil it properly. Now let it cool. Into a plate take potatoes and chopped onion, chopped coriander leaves,salt and mustard oil and mashed everything very nicely. Now make some nice balls with your palm of your hand and Alu Pitika recipe is ready.
Step Four: For Lesera Bhaji recipe take some yardlong beans and cut it into 4 inches long pieces. Cut potato also in long pieces. Now add mustard oil into a pan and add beans and potatoes. Add some salt and turmeric also and mix it nicely. Now in low flame cook it for 10 minutes. Stir in-between. Our Lesera Bhaji is ready.
Step Five: For Kumurar Torkari recipe take ash-gourd and cut it into small pieces. Now cut one small potato also into small pieces. Now add some oil into a pan and add panch phoron and onion pieces. Fry it until onions getting soft. Now add potato and ash gourd and mix it very nicely. Now add salt as per taste, cumin and coriander powder, turmeric powder and mix it nicely. Lower the flame and close the lid and let ash gourd getting little softer. Cook for 7 to 8 minutes in low flame lid closed and stir in-between. Now add water 1 cup to it. Mix nicely give it a nice boil. Close lid and cook in low flame for 10 more minutes. Our Torkari is ready.
Now serve this dishes with hot steamed rice. This is a simple vegetarian Assamese thali.
