Eggplant is a very delicious food. Its softness enhances its taste. Here In this recipe I am going to prepare Eggplant masala recipe. This recipe is prepared with lots of spices. The key Ingredients of this recipe is Eggplant and Potato which is prepared with spices. Eggplant potato recipe can be served with roti or paratha or it can be served as a side dish with hot steamed rice and dal.

Necessary Ingredients To Prepare Eggplant Masala Recipe:
Eggplant 1 large cut into cubes,Potato 1 large cut into cubes,
Onion 1 large chopped,
Tomato 1 large chopped,
Garlic cloves chopped 4 pieces,
Turmeric powder 1/4 tsp,
Red chili powder 1/2 tsp,
Cumin powder 1/4 tsp,
Coriander powder 1/2 tsp,
Garam masala powder 1/4 tsp,
Green chili 2 pieces,
Salt as per taste,
Oil 2 tbsp.
Step By Step Method Of Preparing Eggplant Masala:
Step One: Cut potato and eggplant into cube sized and soaked it into water. Soaking is necessary for eggplant otherwise it can absorb quite a good amount of oil. For potato if not soaked it can get oxidize and get darker in color.Step Two: Now add 2 tbsp oil into a pan and as oil heats up add cumin seeds to it. Let it brown in color.
Step Three: Now add chopped onion and garlic into it and mix it nicely. We have to fry onion and garlic until it gets translucent.
Step Four: Now add chopped tomato into it and mix it very nicely. We have to cook tomatoes until it starts getting soft.
Step Five: Now add the spices as per quantity. I have added Turmeric powder, Cumin powder, Coriander powder, Redchili powder and mix it nicely. Cook for a minute.
Step Six: Now add the potato cubes and mix it nicely. Close the lid and cook for 8 to 9 minutes in low flame. Stir in-between.
Step Seven: Now potatoes are getting softer so now its time to add eggplant. Add eggplant and mix micely.
Step Eight: Now add salt as per taste and mix nicely so that salt is evenly mix with all the veggies.
Step Nine: Now Close the lid and cook it for another 8 to 10 minutes in low flame. Stir in between.
Step Ten: Check if potatoes are boiled or not. If it is boiled after 8 to 10 minutes then our recipe is ready.
Step Eleven: Sprinkle some garam masala powder to it and mix nicely. Add 2 green chilies on top . Switch off the flame.
